LUMEX capillary electrophoresis can measure the organic acid content in soft drinks (juice, soda drinks) and alcoholic beverages (wine, beer). The method is based on the difference in mobility of migration and separation of organic acid anions in an electric field, and the analyzed components are identified and quantified by detecting the optical density of the solution at a wavelength of 254 nm. Inorganic anions (chlorides, nitrites, sulfates, nitrates, fluorides, phosphates, carbonates), ascorbic acid and preservatives (benzoic acid and sorbic acid) do not affect the determination of organic acids.
Compared with the determination of organic acids in beverage samples by HPLC, capillary electrophoresis has several advantages: 1. high separation efficiency; 2. low analysis cost; 3. no expensive column; 4. short analysis time.
